Easy Chicken Pesto Flatbread
w/ Lemon-Honey Side Salad

Notes

  • This is an incredibly forgiving and customizable recipe. Feel free to change the pesto base to tomato sauce, alfredo, etc. or change the mozzarella to cheddar.

  • All toppings are optional. If you want to remove the chicken, tomatoes, feta, etc. (or add something like sliced red onions on top), you can. Anything you could put on a pizza works here. Please feel free to make it your own!

Class Prep

  • Read through the recipe, gather ingredients, and have them readily available before class.

  • Wash your hands and any produce. 

  • Gather your equipment and get ready to ZOOM!

Equipment​

  • Oven or Grill

  • Baking Sheet

  • Knife and Cutting Board

  • Small Bowl or Jar (for making dressing)

  • Medium Bowl (for tossing salad)

  • Spoon or small spatula (for spreading pesto)

  • Parchment paper or foil (optional, but helps with easy cleanup)

Ingredients and Instructions

YOU'LL NEED:

​

2 pieces of naan or flatbread (Store-bought is perfect for this. You could use the minis or the full-size.)

1 rotisserie chicken OR cooked and sliced chicken breasts or thighs

3-4 tbsp pesto (store-bought or homemade)

1/2 c shredded mozzarella

1/4 c crumbled feta

1/2 c cherry tomatoes, halved

Salt and pepper to taste

LEMON-HONEY SIDE SALAD

4 c mixed greens (spinach, romaine, arugula, spring mix, whichever you prefer)

1/2 cucumber, sliced or diced

1/2 c cherry tomatoes, halved

1/4 c olive oil

2 tbsp lemon juice

1 tsp honey or maple syrup

1 tsp Dijon mustard (optional)

Salt and pepper to taste

CRISPIER FLATBREAD OPTION

For a crispier flatbread, brush naan lightly with olive oil. Bake at 400°F for 3-5 minutes before adding toppings.

At the end of the main bake, broil for the last 1-2 minutes for extra golden edges and cheese.

1.) Preheat oven to 400°F. (If you're going to do the crispier flatbread, follow those instructions here.)

2.) Spread pesto evenly over each naan.

3.) Top with mozzarella, chicken, and tomatoes.

4.) Bake for 10 - 12 minutes or until cheese is melted and golden.

5.) While the flatbread is baking, prepare your salad. 

6.) Mix all dressing ingredients in a bowl or jar until combined.

7.) Combine desired amount of salad ingredients and toss with dressing right before serving.

8.) Remove flatbread from oven. Slice and serve warm.
